Brewed coffee is sprayed as a fine mist into a large chamber filled with extremely hot air, typically between 356°F and 572°F, where it flash-dries into powder in seconds. It's fast and cheap to produce at scale, which is exactly why it dominates grocery store shelves. But that intense heat is also the problem: coffee's flavor and aroma come from organic compounds that are extremely heat-sensitive, and blasting them with air five to six times hotter than freeze-drying's finishing temperature or even the temperature of a freshly brewed pot of coffee burns off a significant share of them before they ever reach your cup.
That temperature gap is really the whole story. Freeze-drying tops out around 95°F. Spray-drying runs as hot as 572°F.
